
Here's what you'll need:
1 package lasagna noodles
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
1 can plum tomatoes
10 oz chopped spinach
1/4 cup grated Parmesan cheese
1 cup skim ricotta cheese
Dried basil to taste
Here's what you'll do:
1. Cook lasagna noodles as label directs.
2. Meanwhile, in skillet, heat oil over medium heat. Add onion and cook, stirring occasionally, until tender (about 10 minutes). Add garlic and cook, stirring, for 30 seconds.
3. Stir in tomatoes and juice, breaking up tomatoes with spoon. Heat to boiling over high heat. Reduce heat to medium and cook, uncovered, for 10 minutes. Add spinach and basil and cook for a few minutes.
4. Drain noodles and return to pot. Add tomato mixture and Parmesan. Toss well. Spoon into bowls and top with dollops of ricotta cheese.

Looks divine. I used to make lasagna roll ups all the time and I am not totally sure why I stopped.
